Cooking with Amy: Funfetti Cookie Edition

Remember the time I fell in love with Pinterest and pinned lots of yummy things to cook/bake/eat? Well, be prepared for a summer full of recipes and kitchen disasters. First up, was Funfetti cake batter cookies. You mix a box of cake mix with eggs and some other stuff then you dump in ALL the colored sprinkles you can find. It looks beautiful!


You mix it all up and bake them like cookies.


They come out of the oven all puffed up like a cupcake top. But give them a few minutes and the sink down into a delicious soft cookie. Make sure you don't brown the bottoms. They should be soft NOT crispy.


I couldn't resist breaking off a piece right out of the oven.

Don't they look pretty stacked up?


I ended up with 30ish cookies so I brought them to school so I wouldn't be tempted to nom them all myself.

Will definitely make these again. Delicious and so happy looking!

A Whole Lot of Random

* It snowed and iced today and instead of being whimsical and idyllic, it was just annoying and gushy.

* We have a professional day tomorrow so I'm baking cookies...obviously.  I had extra ingredients from my holiday baking so I whipped up a batch of devil's food cake cookies with dark chocolate and mint chips.  They are ugly but so minty and delicious.

* I mixed my cookie dough with a metal spoon.  This was a mistake.

Oops.

* I want to see Beauty and the Beast on the big screen.  Who's coming with?

* I also want to see that new whale movie.  (Don't judge me.) I have a thing for inspirational stories involving saving animals. Also, John Krasinski.

* Today was Patriots fan day at school because apparently there is a big football game this weekend. When my principal announced this my first thought was, "What game?  Isn't it too early for the Superbowl?" P.S. Yes, it is.

* I finally learned my lesson and put some tinfoil under my cheesy, garlic pita bread. Who knew that when you don't light it on fire this happens:


* I showed the second grade monsters a clip of Martin Luther King Jr.'s "I Have A Dream" speech today and they were mesmerized.

* I wish I had an iPhone so I could use Instagram...and also so I can talk to Siri.

Oh Holy Afternoon

On Saturday, I headed to the home of Thoreau, Emerson and Alcott to hear a (mostly) Christmas, barbershop quartet chorus concert.  Yes, barbershop choruses (chori?) still exist...and no, there was no haircutting happening.  Just 40-50 men in their best Christmas ties ready to serenade.

I must admit, I was anticipating (and hoping for) bedazzled, sequin vests but sadly they were a shiny, snowy white.

They sang all my favorite Christmas songs and happily refrained from any of the stupid cheesy Christmas songs like "Rudolph the Red-Nosed Reindeer."  My eyes maybe, almost teared during "Oh Holy Night" because it's my favorite Christmas song of all time.  The "fall on your knees, oh hear the angel voices" gets me every time.  I've loved it ever since Macaulay Culkin wandered into that church and made friends with the creepy old man in Home Alone...so basically forever.


After the concert, I headed home to bake crack cookies saltine toffee for the first cookie party of the season, and construct a GIANT snowflake out of popsicle sticks.
